Recipe: Creamy mushroom pasta

T.Choithram & Sons introduced Catelli-A premium brand of pasta. Here’s one pasta recipe which is a must-try:

Creamy mushroom pasta (Serves 1)

Notes: A little coleslaw and side-salad go well on the side.

Ingredients:
  • 2-3 oz. (50-75g) dried pasta
  • 3 oz. (75g) mushrooms
  • Quarter ounce (10g) grated Parmesan cheese
  • 1 tbsp. Greek yoghurt
  • 2 tsps. finely chopped parsley

Cooking Instructions:

  1. Cook the pasta in a pan of slightly salted water until it is cooked but still firm
  2. 'Dry fry' the mushrooms in a non-stick pan until they are soft
  3. Add the pasta and yoghurt to the mushrooms, mix well and stir in the parsley
  4. Transfer to a warmed plate and sprinkle with the grated Parmesan cheese
