Creamy mushroom pasta (Serves 1)
Notes: A little coleslaw and side-salad go well on the side.
Ingredients:
- 2-3 oz. (50-75g) dried pasta
- 3 oz. (75g) mushrooms
- Quarter ounce (10g) grated Parmesan cheese
- 1 tbsp. Greek yoghurt
- 2 tsps. finely chopped parsley
Cooking Instructions:
- Cook the pasta in a pan of slightly salted water until it is cooked but still firm
- 'Dry fry' the mushrooms in a non-stick pan until they are soft
- Add the pasta and yoghurt to the mushrooms, mix well and stir in the parsley
- Transfer to a warmed plate and sprinkle with the grated Parmesan cheese
